#ThankYouMiami for Our Natural Resources - Seed Food and Wine Festival 2015

#ThankYouMiami is about being grateful for what our wondrous city has to offer, but it is also about appreciating and preserving its unique gems for future generations to enjoy. We're talking about living sustainably. But what is sustainable living and how do we achieve it? Well, it takes small changes in our daily lives, such as eating less meat to reduce the environmental impact of livestock production. Last month we joined thousands of Miami-ans at the Seed Food and Wine Festival to find out how we can incorporate more plant-based products in our daily lives.

In case you missed it, the Seed Food and Wine Festival is the nation's only plant-based food and wine experience. As meat lovers, we were initially skeptical that vegan fare would do it for us. But as early as the Made In Miami Farm To Table Dinner preview, we were blown away by the possibilities in vegan cooking. Props to Chef Mark Zeitouni of The Standard for proving lasagna doesn't need meat or cheese to be delicious. That said, we're not professional vegan chefs so, how realistic is it that we'll be able to make something like that at home?
These were the questions stirring in our minds as we made our way through the large glass doors of Mana Wynwood toward the festival's Tasting Village. Not surprisingly, Seed Food and Wine had a solution to our doubts: Matthew Kenney Culinary School. The raw and vegan culinary school that is bringing its expertise to Wynwood in the spring has a roster of courses, including one where we can learn to whip up our favorite raw lasagna. At their booth we had a chance to witness and savour their talents. Take it from us, education never tasted so good. Because we don't always have time or desire to experiment in the kitchen we're glad the Tasting Village also introduced us to local raw and vegan restaurants, including newcomers DIRT and Pinch Kitchen both of which previewed delicious beet-based dishes.

We quickly realized a gastro-experience was only the tip of the sustainable iceberg as we wandered deeper into the maze of local and soon to be local businesses. The novelty of starting your day responsibly simply by showering with Sugar and Oats Natural Vegan hand made soap and winding-up your day with all organic preservative free bath salts by Ina Dayle was definitely something new to consider. We even encountered Beet X Beet apparel, which dedicates to preaching the vegan way of life through witty fashionable items for every minute in between.

All in all, at Seed Food and Wine we learned that there is a way to eat, shop and pamper ourselves responsibly. Unlike previous events we have attended, a full belly never felt so light.
